Baking Adventures Lately

Due to the amount of spare time on my hands I find myself looking for reasons as well as things to make. Since first bite of "Emily's Pineapple Cheesecake", I have been in love. Instead of waiting for the next time I see Emily to have a slice, I decided that I could ask her for the recipe, and make it for myself! She willingly emailed the recipe and I immediately set out baking. Here is a little photo tribute to this light, fluffy, delicious dessert! Enjoy!
